Fifi's Cookies & Treats : Kiwi Tarts!!

Salam All,

Today, not being able to attend Seminar Dr Azizian but lucky I have signed up for Seminar on the 3rd of June 2012 at Wisma MCA Ampang. Dapat buat Tart buah saya tapi guna Kiwi je so instead of Fruit Tart we got Kiwi Tarts! Resepi Tart ambil dari Joy of Baking. Tapi step untuk buat Doh tak ikut sangat..hehe...saja eksperimen macam buat biskut. Dough for tarts should be smooth..macam mana nak smooth..kena guna cold butter..yang baru keluar dari peti sejuk..but instead of 'massaging' the cold butter into the flour, I whiped the butter with sugar..just like baking a biscuit..the outcome is just the same. But its a little bit uglier because the dough structure does not hold well. But the tarts tasted fine and looked fine..and my custard cream cuma ada 1 egg yolk sahaja..instead of 3..I kind of not like the egg smell combined with fruits..the smell is a bit strong even when adding the vanilla powder. Tapi I love Egg Tarts..like BEST GILA kalau dapat egg tart sekarang..huhu..made it last two years..came out pretty bad..was freaking out..pergi Jusco beli (had their tarts since I was like 5 years old)..swore never to bake egg tart again..hehe...probably will resume baking it after...I guess..being confident..duhh!..Enjoy this recipe!

Fruit Tart Recipe (yields 24 mini tarts)

A. Pastry crust
195 gm of Wheat Flour
113 gm of butter
50 gm of white sugar (boleh guna icing sugar, I used fine granulated sugar)
1 egg

B. Pastry cream/ custartd cream
300 ml of Milk or 1 1/4 cups
20 gm of wheat flour or 2 tablespoon (advice to reduce to 1 tbs, the taste of flour was quite intense)
20 gm of corn flour or 2 tablespoon
1 egg yolk
50 gm of sugar

C. Glazing (for pastry crust and as preserve agent on top of fruits)
120 gm of Apricot Glaze
1tbs of water

Preparation Method :

1. Pastry Crust
- Fill the flour into a glass bowl or a stainless steel bowl (makes kneading the dough easier)
- Rub the butter and sugar into the flour (use food processor) until it crumbles.
- Create a well in the centre of the mixture, break the egg.
- Cover the egg well and start to mix the egg then knead it until you get a  round smooth dough.
- Roll the dough until 0.4 cm thick and cut into a few sections that will fit the tart mould.
- Insert the flatten dough into the mould and press the dough until it covers all areas of the mould. Cut the excess dough.
- Place the moulds on a baking tray and bake at 180 degree Celsius for 15 mins or until golden brown)
- Once finish baking, remove tart mould. It should remove easily. just pop the crust upside down and the crust will come off.

2. Pastry/custard cream

- Prepare a heat proof with lid container and place it aside.
- Pour 1/4 cup of milk into a container and mix the flours in the milk until it gets thick.
- Pour remaining milk into saucepan and heat it at a very medium heat.
- While waiting for milk to heat, break an egg and take the egg yolk. Place it on a clean plate.
- Mix sugar with egg yolk with a spoon until it blends and form a creamy yellow texture.
- Take 3 tbs of hot milk and pour it into egg mixture. Quickly stir the mixture to avoid curdles.
- Pour the egg mixture into the hot milk and stir quickly with a whisker. Whisk until it blends.
- Pour the flour mixture. The mixture will get thicker in mere seconds. Once thicken. Put the heat off and add vanilla powder in the mixture. Mix well.
- Place the hot custard in the container and close it.
- Fill up pastry crust once they are cool enough. Decorate with fruits like strawberry, mango, banana, kiwi, grape and etc. Be sure to cut the fruits in mini sizes.
